Description

Kamut is a type of wheat that is used to make pasta, bread, and other products. It is a very large grain, and it has a rich, buttery flavor. Kamut pasta is also very high in protein and fiber, which makes it a healthy choice for those who are looking for a nutritious meal. Once the dough has rested and the gluten is relaxed, it is time to start rolling. I have the Bosch mixer pasta attachment which is what I used to roll mine, but you can also roll it by hand or with a hand crank roller. As my official taste tester, my poor husband had to go through many trials of cooked “lumps of dough” as he described them.

If you are not going to use this pasta right away, make sure you store this pasta properly. As this is an egg pasta, I prefer to store it in the fridge after drying for about an hour at room temp. Make sure to dust the pasta generously with flour before doing this.I use a hand pasta machine, as you can see in the photos, but you can also get electric ones that also mix the dough for you. I prefer the middle of the road option here – kneading by hand, then rolling with a machine. That being said, though, the electric ones make homemade pasta an absolute breeze. Serve with Pasta Another good option to consider, depending on your budget, is the Mercato Atlas 150 pasta machine which is also made in Italy. While some pasta recipes call for including oil in the pasta, whole Kamut flour already has oil in it derived from the nutritious germ rich in vitamin E, omega 3 and omega 6. Salt There are so many great sauces to serve this pasta with. I made mine with a vegetable-loaded marinara, but let me share another recipe I love.

In this format and simplicity of ingredients, the quality of the pasta is highly influenced by the quality of the ingredient. This is an ideal stage to highlight the unique and exceptional taste and physical sensory experience of KAMUT® brand wheat.

Extremely good point, Paola! In America you find fat free foods all over the place and what seems good for you from a marketing perspective in reality isn’t indeed. I absolutely agree with you about eating whole foods and using natural sweeteners; they are so much better and taste great too:-) The majority of Italians eat pasta every day for lunch. Of course they vary their recipes so it doesn’t get boring and prepare dishes like this vegetable kamut pasta, tagliatelle with asparagus and peas, tortelli verdi, lumaconi or pasta with a simple tomato sauce. But, yes, that’s right, most Italian eat some kind of pasta every day. But that’s not all. The typical weekday Italian lunch usually includes some kind of meat or fish, vegetables, fruit and espresso. On the weekends expect to find various desserts and gelato. You would think that with these extravagant lunches everyday, the whole country would be obese, no? Yet, Italy is considered to have one of the healthiest diets in the world and is ranked among the highest life expectancies. What’s the deal? I love your insights into Italian diet (and dining/living) secrets! It’s funny; although KAMUT(R) Brand khorasan wheat is grown in North America, the biggest market is Italy. The Italians know a good grain when they find one! When you are rolling the dough, make sure and brush it gently with more flour if you need to. I rolled mine into fettuccini, but this pasta will work well for other rolled shapes and filled shapes.Quantity—Italians dishes aren’t meager portions by any means; however, they aren’t exaggerated and super-sized like you often find in the states or restaurants with all-you-can-eat buffets. When estrogen levels become too high or too low, this causes problems with menstruation, mood swings, infertility and menopause, and it might even increase the risk of cancer. A 2013 study published in the International Review of Neurobiology explains that manganese is “pivotal for normal cell function and metabolism.” Working with whole grain flour made the process more difficult as the bran can tear through the dough and it must be handled more gently.

The benefit of getting the Mercato Atlas brand is that there are the largest number of attachments available for different pasta shapes should you wish to expand your pasta making skills in the future. These days, it appears that Kamut is easier to source for retail customers and that is why I have titled this post Kamut pasta.
