First, it’s crafted by macerating cherries in an old brown beer, then it’s matured for a whole year and then it’s blended with various ages of Oud Bruin and Goudenband beer. Surprised to discover a glowing red beer with a fruity taste, the Master Brewer finally decided to transfer it to barrels.

The result is an incredibly strong and full-bodied beer with the addition of liquid nitrogen that ensures the right pressure in the bottle.Using fresh cherries – handpicked a cherry’s throw away from our brewery – this limited release celebrates local Scottish produce. The smooth distinctive character of the matured beer serves as the perfect counterpoint to the pure organic fruit juice. Lambics, sour cherries (200g per litre) and the right fermentation process can produce wondrous results. For this beer, cherries are then added to give the beer a pleasant and full fruity sweetness that offsets the sour base before a pleasing and refreshing tart finish. The Slaapmutske is an old school brown cherry beer that has a distinctive oak aftertaste due to its maturation process, that takes place in oak barrels. It is on this beer that the kriek and framboise is based, a premium fruit beer for which Belgium is well known.
